Quail
Quail are a tiny full-flavored bird that you can roast, braise, fry, grill or even saute. They taste gamier than chicken but not so much so that they are off-putting to people who don’t enjoy that taste. For a lot of people, quail is something that they see on restaurant menus or cooking shows, but quail is very easy to prepare at home. Because of their small size, they cook up quick. If you are looking for an elegant weeknight meal you can have them on the table in under 30 minutes.
They have a structure and color similar to chicken, but you will likely want to have two for each person when serving as a main dish. Serve them alongside a warm grain salad and some roasted grapes. Or make a mini thanksgiving style meal with mashed potatoes, cornbread dressing, and a delicious tart cranberry sauce. Another idea is to braise a few quail in sage and butter and serve with glazed carrots.
