Chicken Soup
Making chicken soup can be as easy as opening a can of soup. While there is no shame in heating up the canned variety there is nothing quite like a bowl of homemade soup. There are many different levels of homemade as well, you can go all out and make your chicken and broth from a whole chicken. You can make your soup a little faster with purchased stock or stock you have in your freezer. Shredded rotisserie chicken is another easy short cut, and you can always make a broth from the bones for your next soup. Chicken is a wonderful canvas for so many flavors and combinations. Carrots, onions, and celery are always great additions; parsnips, corn or celeriac is a nice change of pace. Try adding garlic, ginger or lemon. And don’t forget some fresh thyme, parsley or dill sprinkled over top before serving.
