Tender, succulent meat braised alongside potatoes, carrots, onions or any other vegetable you have on hand. Pot roast is a comfort food classic and may very well be the OG of the one-pot meals that are so popular today. It is a great meal for the slow cooker and lends itself well to cooking in a dutch oven.
At first glance pot roast is a simple meal. Sear your beef, add it to your pot with your vegetables and braising liquid, then cook low and slow. Broken down like that it is a simple meal but you can also get creative with it. Instead of the usual vegetables try mixing it up. Leave out the potatoes, add only orange-colored vegetables, or try adding some hearty greens near the end of the cooking. If you only use beef broth as your braising liquid try adding wine, tomato paste or balsamic vinegar. Add hearty fresh herbs like thyme or rosemary, try a garlic-heavy version or add an anchovy filet or two for a delicious umami hit.
