Latkes (Potato Pancakes)

Latkes are often times referred to as potato pancakes but there are differences in the two. Potatoes for latkes are grated using the bigger holes of the grater and are mixed with eggs and a bit of matzo meal. When fried in oil, latkes become golden and crunchy. While potato pancakes tend to have a softer texture because the potatoes are grated more finely using the smaller holes of the grater. Potato pancakes are also typically more uniform in shape. Some potato pancake recipes may call for mashed potatoes instead of grated.
Latkes are primarily eaten during Chanukah celebrations when it is customary to eat foods fried in oil. While latkes are not the only traditional dish served they are one of the most popular. They are traditionally topped with applesauce and sour cream.
Potato pancakes are known by different names in several cuisines. Boxty in Ireland, gamja-jeon in Korea, raggmunkar in Sweden, and bramborák in the Czech Republic, just to name a few.
