The modern day version of the grilled cheese sandwich is only about 100 years old. In the 1920’s an Iowa man invented a bread slicer, making sliced bread more readily available. At the same time process cheese was also gaining in popularity. Through the Great Depression the grilled cheese remained an affordable and popular option. During the 1950’s the grilled cheese was more of an open face sandwich melt. Adding a second slice of bread came about as Kraft Singles started to make their way into grocery stores. 
Today you can find many different versions of grilled sandwiches, there are a plethora of Pinterest boards to inspire home cooks. You can even find restaurants and food trucks that specialize in grilled cheese sandwiches. The humble grilled cheese of yesteryear is now often made with more lavish ingredients, but to truly be worthy of the name the main ingredient and the star of this sandwich should be the cheese.
