French Onion Soup

Many people think of the cheesy toasted bread, or croute, on top but it is the humble onion is at the heart of a comforting bowl of French onion soup. It takes a good amount of patience, almost an hour’s worth, to slowly cook the onions to their glorious caramelized finish. Then a rich beef stock and some wine are added, and everything is simmered to an intoxicating end. Now you top it with your toasted croute and generously top with Swiss, Gruyere or Emmental cheese, and let it sit under the broiler until melted and browned.
