Fish (General)


Cooking fish at home can be intimidating, but is actually quite easy. Fish lends itself to several cooking methods. It can be baked, poached, pan-fried, grilled, broiled, steamed, battered and fried. With so many different cooking methods it is easy to find one that suits your style and abilities.

When buying fish the flesh should be firm and bright, with no discoloration. If the fish is whole the eyes should be clear and it should look like it was just pulled from the sea (or lake). It should smell sweet and fresh like you are at the ocean. If it smells strong and fishy leave it as it is past it’s prime. Because if it’s short shelf life it should be cooked the same day you bought it. If you can’t cook it right away, freeze it for another day.

Just as there are many ways to cook fish, there are many flavors that pair well with fish. Selecting the best pairing will depend on the type of fish, as well as your own personal taste. Citrus, tarragon, chili pepper, garlic, miso, basil, and ginger are all a great starting point.
