When thinking about chicken pot pie you probably think of its hot creamy filling and flaky crust. It is a comforting and homey dish that is served piping hot from the oven on a cold fall or winter night. What you might not know is that chicken pot pie has a long history starting in back in the days of the Romans and that in Elizabethan times it may also have included live birds being baked inside to fly out when cut. Thankfully nowadays the chicken pot pie is a much humbler and less flamboyant sort of dish it is certainly no less delicious (possibly more so 😉).

Chicken Pot Pie is just one version of the popular meat pie, other versions are made with lamb, steak, pork, seafood and more. To make life even easier you can make chicken potpie using the leftover chicken from the previous dinner. By adding in a few select vegetables and a delectably creamy sauce then baking it all in a buttery crust or topping it with flaky biscuits then baking, you have the beginnings of a great dinner just add a salad or additional vegetables to keep things healthy or go with more carbs like mashed potatoes, rice or cornbread for a hearty meal.
