Chicken piccata is the simple kind of dish that tastes so good you would swear it takes much more to create it. So what is chicken piccata? Well, piccata is a dish made up of meat sliced or pounded thin, then served with a bright lemon, butter, and/or wine sauce. It’s then topped with salty capers and fresh parsley. Its origins are in Italy where veal is most common but chicken piccata is most common in North America.

A favorite way of serving chicken piccata is over pasta, usually a long noodle such as linguine. For a change of pace, you could try serving it over mashed potatoes, or even roasted potatoes. Any vegetable that is enhanced by lemon would be a good choice. If you’re roasting potatoes why not toss some broccoli or cauliflower on the tray as well for an easy meal. Noodles made out of zucchini would make a lovely modern take on this classic dish.
