Ceviche is a zesty, fresh dish that is very popular in Central American and coastal regions. In the ’80s ceviche started to make its way into the US and now appears on menus and events all over North America. Lemon or lime juice cures raw fish such as sea bass or halibut, sliced raw onions, and diced hot peppers. Sometimes diced tomatoes and cucumber are also included. Seafood such as shrimp, scallops, crab or squid is also used.
This a wonderful dish in during the hot days of summer. Quick and easy to prepare, and you don’t even need to turn the stove on. Because the fish or shellfish isn’t cooked over heat it is very important to use only the freshest fish. Think sushi grade, and make sure you buy it from a reputable seafood seller. Ceviche makes a great main dish or starter. Serve it up with something crunchy like tortilla chips, plantain chips, on a tostada or even with saltines. It makes a light starter if you are grilling a steak or wrap it in crisp lettuce leaves and serve it with rice and jicama slaw.
