Seared Scallops

Delicate, melt in your mouth seared scallops make a quick and elegant dinner. With their mildly sweet flavor, they go well with braised fennel or sauteed greens. Add some risotto, pasta or saffron rice for a delicious meal.
 
Seared scallops are fast to cook and they need very little to prepare them. A cast iron skillet heated until very hot, some salt & pepper, and a little oil is all you need. To achieve that signature caramelization be sure to pat the scallops dry with paper towels before adding to the pan.
